Description

Moist and sweet, this Easy Pineapple Upside Down Cake features caramelized pineapple rings and cherries on top of a soft, fluffy cake base infused with pineapple juice for irresistible tropical flavor.


Ingredients

113g (1/2 cup) butter

200g (1 cup) brown sugar

1 can (20 oz / 567g) pineapple slices, drained and juice reserved to make 240ml (1 cup) with water if needed

1 box (432g) white cake mix

80ml (1/3 cup) oil

3 egg whites or 2 whole eggs

12 maraschino cherries


Instructions

1. Preheat oven to 175°C (350°F).

2. Spray a 9 x 13-inch (23 x 33 cm) cake pan with baking spray.

3. Place butter in the pan and put in oven to melt, or melt separately and pour in.

4. Sprinkle brown sugar evenly over melted butter.

5. Arrange drained pineapple slices over brown sugar layer.

6. Place a cherry in the center of each pineapple ring.

7. In a bowl, combine cake mix, oil, eggs, and reserved pineapple juice (replace water with juice).

8. Pour batter evenly over fruit in pan and smooth the top.

9. Bake for 40–45 minutes, or until a toothpick inserted in center comes out clean.

10. Cool 4–5 minutes, then run a knife around edges.

11. Invert onto serving platter; replace any fruit that sticks.

12. Serve warm or at room temperature.

Notes

If cake mix instructions differ, replace liquid with pineapple juice.

Ensure pineapple and cherries are well-drained to avoid soggy topping.

Add a pinch of salt if using unsalted butter.

Invert cake within 5 minutes after baking to prevent sticking.

Store covered at room temperature.
