Description
Creamy, nutty, and irresistibly chocolate-coated, these Peanut Butter Frozen Yogurt Bars are the ultimate frozen treat. Perfect for hot days or as a make-ahead dessert, they feature a smooth peanut butter-Greek yogurt filling topped with crunchy peanuts and wrapped in a decadent chocolate shell.
Ingredients
240g (1 cup) plain Greek yogurt
128g (1/2 cup) creamy peanut butter
15ml (1 tablespoon) maple syrup or honey
5ml (1 teaspoon) vanilla extract
30g (2 tablespoons) roasted and salted peanuts (optional)
170g (1 cup / 6 oz) chocolate chips or chopped chocolate
30ml (2 tablespoons) coconut oil
Instructions
1. Line a baking sheet with wax paper or a silicone baking mat.
2. In a small bowl, combine Greek yogurt, peanut butter, maple syrup or honey, and vanilla extract until smooth.
3. Use a cupcake or ice cream scoop to dollop half of the mixture into 4-6 mounds on the lined pan. Press a popsicle stick into each mound, then top with the remaining yogurt mixture. Flatten slightly.
4. Scatter roasted peanuts evenly over each mound. Freeze for at least 2 hours until solid.
5. Melt chocolate and coconut oil together in the microwave, stirring between intervals.
6. Dip each frozen yogurt bar into the chocolate mixture. Place back on the sheet pan. Serve immediately or freeze for later.
7. Let bars thaw 5-10 minutes before eating for easier biting.
Notes
For extra texture, mix in 2 tablespoons of mini chocolate chips into the yogurt mixture before freezing.
To make a neater presentation, place peanut halves flat-side down on the yogurt mounds before freezing.
